For the preparation of today’s recipe, we will divide the process into two parts. On the one hand hake and, on the other hand, green cream. -1 tray of cooked preparation (2 turnips, 3 celery sticks, 3 carrots, 1/4 cabbage, 1 zucchini)
-1 glass of chicken broth
-500g of Galician hake
-4 heads of garlic
-3 cups of peeled prawns (I use the ones that come frozen already)
-2 pinches of fresh parsley
-1 tablespoon of olive oil
-Ground black pepper
FOR THE CREAM: STEP 1 …
We cut all the vegetables to large pieces.
In a pot, place the vegetables and pour the glass of chicken stock and let it cook over medium heat for about 20 minutes.
When the vegetables are cooked, let rest a bit so as not to put everything boiling in the blender or processor
We put everything in the blender and grind for a minute to avoid lumps and that is well homogeneous and with a smooth texture.
FOR FISH: STEP 1 …
Peel and slice garlic cloves.
We grease a frying pan and, over medium heat, brown a little bit of the garlic and put the fish on the side of the skin.
Add the prawns and parsley on top and cover to let it cook in its juice over medium heat, for 15 minutes.
The fish and prawns are cooked with their own juice and steam by having the pan covered, which gives much more flavor to the dish and is tasty.
Finally, in a deep dish, place the cream of vegetables, and carefully on top we support the hake and some prawns and garlic, sprinkle a little black pepper and ready to serve.
